I cook using a philosophy I refer to as “meat on the side” (also the name of the most awesome cookbook ever). This means the vegetables in many of my dishes are the stars of the plate and the meat is, well, on the side.
In order to make this work, I’ve discovered that I need to think about vegetables in new and creative ways. Beautiful, fresh vegetables themselves often inspire me, but I’ve found that a lot of my inspiration also comes from looking at vegetarian Web sites and magazines.
When I sit down to write a recipe, I begin by actually creating a vegetarian meal that is complete and balanced. Then I go back and add in some meat (or not). So to be clear, I’m not a vegetarian but I do eat a lot of vegetarian meals and I find meatless meals to be inspiring for all of my cooking.
For this week’s challenge, I thought it would be cool to see if the girls can commit to a week of no meat.
All veggies, all the time.
