Blackberry Mandarin Orange Cake

Growing up I was never allowed to have sweets; I know, it was basically torture… But I was lucky enough to have wonderful Aunts that would load me up with sugar whenever I came to visit.

One dessert that always brings back memories of my childhood was my Aunt Carole’s Mandarin Orange Cake.   With the challenge of using blackberries this week, I decided to recreate a memory from my past.

I made this Blackberry Mandarin Orange Cake with homemade pastry cream and whip cream, not feeling that frisky?  Feel free to use a package of vanilla instant pudding, and cool whip as a quick substitute!

This cake brings back all of the feelings of home, and has the perfect berry citrus balance.
